BREAKFAST POTATOES

This is a great side dish for a big breakfast.  You could make them for dinner, too.

Ingredients:

4 potatoes

1/2 cup chopped onion

1/2 cup chopped red bell pepper

4 tbsp. butter

salt and pepper to taste

Directions:

Boil unpeeled potatoes for 10 minutes.  (Keeping them in the skins prevents them from turning to mush.)

Cool potatoes and cut in 1/2" cubes.

Saute onion and bell pepper in butter in large skillet for about 3 minutes then add potatoes.

Cook for 5-10 minutes per side until potatoes are golden brown.

Enjoy!
