CRAB AND AVOCADO SALAD

Ingredients:

3 large avocados

2 1/2 lbs. lump crab meat

1/2 cup celery, chopped fine

1/4 cup lemon juice

4 tbsp. olive oil

1/4 cup vinegar

1/4 tsp. cayenne pepper

3 tbsp. green onions, chopped fine

salt and pepper to taste

Directions:

Combine all of the ingredients (except avocados) an hour prior to serving.  When ready to serve, peel and slice avocados and toss with the crab meat mixture.  Serve on top of a bed of lettuce with this special dressing.

Dressing ingredients:

1 cup mayonnaise

2 tbsp. chopped parsley

1/4 cup chili sauce

1 tbsp. finely chopped green onions

Pinch of cayenne pepper

1/4 cup heavy cream, whipped

Combine all ingredients, folding in heavy whipped cream last.
