TURKEY POT PIE

If you're looking for something more creative than a sandwich to make with your leftover Thanksgiving turkey, this is an easy recipe that's sure to please.  You can also substitute with chicken.

Ingredients:

1 cup cooked, chopped turkey

1 small onion, chopped fine

1 tbsp. butter

1 can peas 'n carrots

1 can cream of potato soup

2 refrigerated pie crusts

salt and pepper to taste

Directions:

Preheat oven to 350.

Roll out first pie crust and place in the bottom of pie pan.

Saute onion in butter in small skillet until wilted, about 5 minutes.

Combine turkey, onion, peas and carrots and cream of potato soup to make the pie filling.

Place second pie crust over filling, trimming excess dough around edges of pie plate.  Crimp with a fork around edges and cut two or three slits in top of crust.

Bake for 30 minutes or until crust is golden brown.
