
All packed with vitamins and just plain old good!
Ingredients:
2 – 3 bunches of any type of greens you have a taste for (Collards, Mustard
or Turnip Greens or Kale)
1 small smoked turkey leg or wing
5 cloves garlic, chopped
2-3 tbsp. oil
1 small onion – peeled, and sliced thinly
2 -3 tbsp. cider vinegar (optional)
1 cup low sodium chicken broth
1 tsp. pepper
1/z tbsp. Café Netties Saltless Classic European
2 Tbsp. maple syrup (optional)
Directions:
CUT thick stems from greens, Roll and cut into slices
THOROUGHLY rinse greens. Pat dry with paper towel or lay flat on sheet pan
REMOVE skin and meat from turkey leg or wing, discarding skin
Coarsely chop meat
Sauté chopped turkey and garlic and onions in hot oil in large skillet or
pat over medium high heat for 2 – 3 minutes. Add vinegar 1 tbsp. at a time.
Chicken broth, and pepper and seasoning, Add greens, reduce heat to low and
simmer, stirring occasionally. After about 15 minutes, add 1 Tbsp maple syrup,
simmer for 15 more minutes or until as tender as you want them. Put a top on
skillet or pot and turn heat off to finish cooking. Taste to see if you want to
add remaining syrup or vinegar. Serve immediately
Sugar can be substituted for syrup
NOTE: For a milder flavor, reduce cider vinegar and maple syrup. Increase chicken broth if you need more liquid.
