BANANA PIKELETS

1 cup Gluten Free bread mix (white or whole meal)
2 eggs - beaten
¼ cup sugar (optional)
¼ teaspoon salt
2 ripe bananas - mashed
Milk

1. Sift bread mix into a mixing bowl

2. Add sugar and salt and stir to combine

3. Make a well in the mixture and pour in eggs

4. Bring dry mixture into the well from bowl edge with spatula

5. Stir slowly with wooden spoon

6. Fold in mashed banana

7. Fold in small amounts of milk until mixture is required consistency

8. Let stand for 15 minutes

9. Drop spoonfuls onto hot griddle or heavy base fry pan

10. When bubbles appear on surface and brown on the other side, flip over and brown other side

11. Continue until batter is used

Allow to cool and serve topped with jam/jelly and whipped cream

Makes 12 Pikelets
