AVOCADO STUFFED POTATO SHELLS

12 baby potatoes
½ onion - finely chopped
¼ cup fresh parsley - finely chopped
Salt & Pepper
1 tablespoon red pepper - finely chopped
1 small avocado
¾ cup grated melting cheese
Extra parsley for garnish

1. Steam potatoes in their skins until just tender. Cool and cut into halves.

2. With a spoon remove a little of the potato from each half to make a shell

3. Place halves on baking tray and save potato centers

4. Place chopped onion in a bowl with chopped parsley, salt, pepper, and chopped red peppers

5. Mash avocado and add to onion mix

6. Add potato centers to mix

7. Stir until well mixed

8. Place spoonfuls in to each potato halves, slight higher than potato shells

9. Sprinkle with grated cheese over the top and place under grill until just brown

10. Add parsley to decorate
