A delicious treat for Halloween or to add to any Festive Fall Table.
It is very important to note that no substitutions or eliminations can be made in this recipe. All ingredients are as is.
RECIPE INGREDIENTS
4 eggs
1 2/3 cup sugar
1 cup vegetable oil
1 can (16 oz.) pumpkin
2 cups all-purpose flour
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
Icing:
1 pkg. (3 oz.) cream cheese softened
2 cups confectioner's sugar
1/4 c. butter, room temperature
1 tsp. vanilla
1-2 tablespoons milk
DIRECTIONS
Preheat oven to 350F.
In mixing bowl, beat eggs, sugar, oil & pumpkin. Combine flour, cinnamon, baking powder, baking soda & salt. Gradually add to pumpkin mixture and mix until well blended. Pour into a 9 x 13 x 3" pan sprayed with baking vegetable spray & bake at 350F for 30 minutes. After 30 minutes test cake to see if done, if still gooey, bake another 5 minutes & test again).
Cool in pan.
Mix all icing ingredients until consistency desired & frost cake. (Can double icing recipe if desired)
