MISSISSIPPI MUD CAKE

Ingredients:

2 sticks butter (always a good start!)

1/2 cup cocoa

4 eggs, lightly beaten

2 cups sugar

1 1/2 cups flour

1 1/2 cups chopped pecans (optional)

Pinch of salt

1 tsp. vanilla

Miniature marshmallows

Melt butter with cocoa, cool and add sugar and eggs and vanilla.  Mix thoroughly.  Add flour and salt slowly to mixture.  Mix well and pour into 9x13 pan.  Bake at 350 for 35-45 minutes.  While hot, push marshmallows into cake.

ICING:

1 box powdered sugar

1/2 cup milk

1/4 cup cocoa

1/2 stick butter

Beat butter and sugar, then add cocoa and milk.  Mix until creamy and spread on warm cake.  Wait until cake has cooled before cutting.
