
Ingredients:
2 cups flour
1 stick butter
1/2 cup shortening
5 egg yolks
1 tsp. baking soda
2 cups sugar
1 cup buttermilk
1 tsp. vanilla
1 small can coconut
1 cup chopped pecans
5 egg whites, stiffly beaten
Directions:
Preheat oven to 350.
Beat egg whites and set aside.
Cream butter and shortening.
Add sugar and beat until mixture is smooth.
Add egg yolks and beat well.
Combine flour and baking soda and add to creamed mixture alternately with buttermilk.
Stir in vanilla.
Add coconut and nuts.
Fold in beaten egg whites.
Pour batter into 2 greased and floured 8" cake pans.
Bake for 25-30 minutes. Frost with cream cheese icing.
CREAM CHEESE ICING
8 ounces softened cream cheese
1 stick softened butter
1 box powdered sugar
1 tsp. vanilla
Beat all ingredients until smooth. Sprinkle chopped pecans between layers and on top.
