Ingredients:

1 4-5 pound chicken
4 cups water
3 14 oz. cans of chicken broth
1 medium onion, chopped
2-3 stalks celery, chopped
1 can biscuits (this may seem like cheating to dumpling purists, but trust me it's wonderful and a great time saver)
1 tsp. minced garlic
Salt and pepper to taste

First things first:
Get Fresh- Use chicken from free range organic birds; free from additives, hormones and a questionable raising procedure. Free range, organic, skinless chicken is much higher in Omega 3 and 6 fatty acids as well as conjugated linoleic acids, which have positive cardiovascular effects. Buying your own free range organic chicken and breaking it down can actually be cheaper than buying processed chicken parts individually-plus you get the carcasses for stock.

Don't worry about calories or cholesterol on this fabulous soup.  Once you've followed this recipe, you can easily substitute and add some of your favorite ingredients, depending on what you like.  You could add potatoes and clams for a perfect clam chowder, or maybe add red bell peppers for an additional layer of flavor.

6 large onions
1 green bell pepper
1 red bell pepper
1 large head cabbage
1 large stalk of celery
8 carrots
1 32 oz. can diced tomatoes
1 package of onion soup mix

The Italian minestra refers to a variety of moderately thick soups. Minestrone is a hearty vegetable-filled minestra that often contains beans and sometimes pasta. We've omitted the pasta here but added some Italian sausage. With minestrone, it seems, there is no end to the delectable variations.

A few simple ingredients make a sumptuous soup. Be sure to use a high-quality cheddar; it's crucial to the dish's flavor. Choose a yellow cheese for the richest color. For a chunkier soup, skip the pureeing and just break up some of the potato with a spoon.

This recipe can easily be doubled, improves on standing and may be refrigerated for two or three days.  You can also substitute lobster or shrimp if desired.
