Ingredients 1 (15.5 ounce) can black-eyed peas 1 cup chopped pickled jalapeno peppers 1 (4 ounce) jar pimento peppers, drained and chopped or tomatoes1 (8 ounce) jar mushrooms, drained and diced 1/2 cup chopped celery 1/2 cup chopped onion 1/2 cup olive oil salt and pepper to taste Cilantro – love it

1 cup diced peaches (about 2)
1 cup cubed seeded tomato (about 3)
1/4 cup sliced green onions
2 teaspoon sugar
2 teaspoon cider vinegar
1 teaspoon minced peeled fresh ginger
1/8 teaspoon salt
1 dash of fresh ground pepper

Ingredients 3 (15 ounce) cans black beans, drained and rinsed 1 (11 ounce) can Mexican-style corn, drained 2 (10 ounce) cans diced tomatoes with green chile peppers, partially drained 2 tomatoes, diced 2 bunches green onions, chopped cilantro leaves, for garnish

2 cans artichokes
1 c. mayo
1 garlic clove, minced
1 c. shredded parmesan cheese, fresh

cut up the artichokes, mix everything together and bake for 30 mins at 35 til brown on edges. yum.

With the Super Bowl just around the corner, this is a great (and easy) dip to serve while watching the big game!

Ingredients:

1 lb. ground beef

1 medium onion, chopped fine

1 packet chili seasoning

1 small can tomato sauce

1 lb. Velveeta cheese

There are a lot of different variations to this Mexican dip, but some things are just better simpler.  The trick:  use very ripe avocados.

Summer salsa Recipes ~ Peaches are in at the Farmers Market you can do other things beside eat them by themselves – these make great side for turkey burgers, chicken, ribs yummy!

2 ripe, but firm medium peaches
1 tablespoon vegetable oil
1 tablespoon fresh lime juice
1/4 cup finely chopped red onion
1/2 cup diced red and/or green bell pepper
1 tablespoon chopped cilantro
1 teaspoon (or to taste) minced jalapeno pepper
1/2 teaspoon salt
fresh ground black pepper to taste

2 packages of chopped frozen spinach

1 14 oz. can artichoke hearts, drained and chopped

1 onion, chopped fine

1 stick butter

8 oz. cream cheese

8 oz. shredded monterey jack cheese

8 oz. shredded mozzarella cheese

1/2 cup grated parmesan cheese

1/2 cup heavy whipping cream

1/2 tsp. salt

1/2 tsp. pepper
